Fiore Sardo with Honeyed Fig Jam

Fiore Sardo, meaning “Flower of Sardinia,” is a sheep’s milk cheese from Sardinia, Italy. It’s salty, smooth finish pairs well with the sweetness of the honeyed fig jam.


16 oz Fiore Sardo

1 1/2 cups dried black mission figs, tough stems removed, chopped

1 cup water

1/4 tsp salt

1/2 tsp vanilla

2 tsp lemon juice

2 Tbsp honey


  1. In a small russe, combine figs, water and salt. Set to medium-low heat and allow mixture to simmer for 15 minutes and reduce to a jam consistency.
  2. Add vanilla, lemon juice and honey and continue to cook for another 2 minutes.
  3. Cool to room temperature before serving with cheese.
